Parc naturel du Jorat - Passionate about cuisine, wine and hospitality, the three partners of the Auberge de l'Abbaye de Montheron put forth their best effort each and every day to make sure that you have a unique experience in this extraordinary place.
Chef Rafael Rodriguez offers his curious and facetious look at nature and the products that surround him to create dishes that are often astonishing, always elegant and delicious. Féra marinated in verjuice, suckling pig in chasselas, beef fillet in walnut wine or alpine mojito and an encounter between double cream and white chocolate: these few emblematic recipes of the restaurant of the Montheron Abbey all tell a story of landscapes and moments.
Rafael and his team seek new balances, sometimes a little sassy, and always carefully choose products from the rich Vaud and Francophone Swiss terroir. They gather a few herbs and fruits from the forest, receive vegetables from the permaculture garden of partner restaurant Auberge du Chalet-des-Enfants, and playfully and skilfully use all the cooking techniques of yesterday and today.
