Silvana and Albi von Felten live a seasonal cuisine that is characterised by top regional products. Their affinity for biodiversity, ProSpecieRara and slow food is clearly noticeable and enjoyable in their cuisine. From "fine dining" creations and well-known, popular dishes to simple "Speuzerli" (Erlinsbach tapas), the menu is varied, contemporary and always fresh. The regional network of producers, farmers and winegrowers is very important to them. Together they develop high-quality products with which the Hirschen crew compose the finest dishes.
