Parc naturel régional Gruyère Pays-d'Enhaut - In Pringy, Mazette transforms local fruit into characterful ciders and tackles food waste through a collaborative approach.
The Mazette adventure, based at Fou du Roi in Pringy, is above all the story of five foodie friends committed to local produce and good living. It all began in Albeuve in 2020 with the idea of giving a second life to fruit from orchards and gardens in the region that had been left unharvested or downgraded, by turning it into cider. After moving to Pringy in 2024, their press has continued this anti-waste mission every autumn by processing, on behalf of others, several dozen tonnes of apples, pears and quinces brought in by private individuals and farmers.
Mazette’s sustainable initiatives include a partnership with the Clos-Fleuri Foundation, whose beneficiaries take part in the pressing process, the conversion of pomace into biogas, and collaborations with schools in the Park.
But that is not all: the group of friends also crafts its own rustic, full-bodied ciders with care, made in Gruyeres. Each vintage carries the gentle name of a bird, inspired by old-fashioned insults from Old French or regional patois.
