Parc naturel régional Gruyère Pays-d'Enhaut - In Pringy, Le Fou du Roi brews creative beers with local flavours in a family-run microbrewery powered by wood from the municipal forest.
A little offbeat, the team at Le Fou du Roi has turned its microbrewery into a lively place — much like its… bright pink barrels. Founded by Marie and Vincent Trunz, who restored the former sawmill in Pringy, this family business creates an almost limitless range of beers.
Friday evening tastings, from 4 pm to 7 pm, invite visitors to discover the brewery’s creations, while the shop remains open throughout the week.
These surprising brews often highlight local ingredients such as chocolate, pumpkin, fir buds, as well as meringues and vin cuit. Many custom-made batches also delight local clubs and community groups.
Among Le Fou du Roi’s many sustainable initiatives, one stands out in particular: its steam generator fuelled by logs supplied by the municipality of Gruyeres — an innovative system that powers the entire brewing process.
